Here in Malta we usually serve them on birthdays. But everyday is someone’s birthday! To obtain a perfect result use Maltese honey, it has a delicious flavour, resulting from the wild thyme on which the bees feed.

Instructions
  1. Rub the butter into the flour and add the egg yolk
  2. mix the sugar with the water and add the orange water or, if they're not for babies, some brandy
  3. Bind the pastry with this to make a pliable dough
  4. Roll the pastry out thinly and cut into 1cm strips and drop them one at time into deep hot oil
  5. As you drop them twist them once or twice to make loops
  6. Fry till golden
  7. Put the loops on a pretty dish and decorate with a thin stream of honey and with hundreds and thousands.
  8. Serve more honey at table
