Instructions
Pastry
  1. Make the pastry using the flour and the shortening adding water and a pinch of salt. Knead thoroughly and pull with a rolling pin (not too thin)
Filling
  1. Cut each fish into 4 portions. Dip the portions in flour and fry in shallow fat (or in extra virgin olive oil) until cooked through. Be careful not to overcook. Remove the bones, set aside
  2. Fry the sliced onion in 2 tbsp oil until soft. Add the tomatoes, add the cleaned spinach and the cauliflower together with 25cl of water. Cover closely and cook until vegetables are soft (about 25 minutes)
  3. Add the olives, the sultanas, and the walnuts
  4. Line in a 30x20 cm pie dish with a layer of pastry
  5. Put half of the vegetables mixture on this. Put the fish portions on top. Cover with the remaining vegetables and with a pastry lid. Prick all over the pastry lid with a fork or a knife.
  6. Bake on the middle shelf of a pre-heated oven (220°)
  7. Keep the temperature high for the first 15-10 minutes then lower to 180° and cook until golden brown.
