Cut the mozzarella into pieces and put it in a colander to drain the water of mozzarella
After about 15 minutes, when the mixture of the mozzarella will be dry, place in a food processor with all the other ingredients excluding extra virgin olive oil
Transfer the mixture into a mixing bowl and if the mixture is too liquid, add a little breadcrumbs
Shape into balls of equal size
Bake in a hot frying pan with oil, on low heat, for about ten minutes or until golden brown, turning occasionally
Place your fried patties of mozzarella on paper towels. Blot excess oil with paper towels and served piping hot
The fried patties of mozzarella should be eaten right to enjoy them crisp and streamers.
Once cooked they can be stored in the refrigerator for one day.
It can freeze already cooked for about 1 month. When consuming them, warm them directly in the oven without a thaw
Tip: prepare small cones of paper that you use for fried, fill each with 3-4 mozzarella and garnish with rosemary sprigs or with the sauce. Really cute for your guests
