Instructions
  1. Boil Spaghettini.
  2. Fry the pancetta till crisp, remove and reserve the fat in the pan.
  3. Add the olive oil and the butter.
  4. Gently fry the chilli until it starts to turn golden.
  5. Add the garlic and fry until just starting to colour. Do not burn!
  6. Return the pancetta to the pan, toss in spaghettini with a ladle of cooking water, and fresh parsley.
  7. Taste and season. Grate over Parmesan.
