Instructions
  1. Prepare the broth
  2. Add the olive oil and butter to skillet, and stir the the finely chopped onion.
  3. Then add the mushrooms and rice. Let toast the rice for a few minutes then add the white wine and let it evaporate.
  4. At this point add a quantity of broth that just cover the rice and begin cooking, stirring occasionally. Add salt to taste and broth so that the rice will always remain covered.
  5. Add the grated Parmigiano cheese, sprinkle the rice with chopped parsley and serve.
