Instructions
  1. toast a bit the breadcrumbs into the oven (preheated at 150°)
  2. Beat the eggs and add salt and pepper to taste
  3. Trim away fat (if it's too much), and nick the membranes lest they contract and make the cutlets curl while cooking.
  4. Beat the veal cutlets with a meat mallet or a rolling pin.
  5. Dip each side of the cutlet in the beaten egg, and then in the breadcrumbs, making sure it is completely and well coated.
  6. Preheat the butter in a pan, and fry the cutlets until they are golden brown on both sides (you can use Extra Virgin Olive Oil to have a lighter and more delicate recipe)
  7. Once finished, remove cutlet from pan and drain on a paper towel.
  8. Serve garnished with parsley or lettuce and a wedge of lemon.
